Nestled in the heart of the Mornington Peninsula wine country, The Dining Room at Lancemore Lindenderry Red Hill offers a refined but relaxed regional dining experience — celebrating local produce, award-winning wines, and warm, thoughtful hospitality.

 

We are seeking a passionate and experienced Restaurant Manager (or an outstanding Host ready to step up) to lead our front-of-house team and become the face of our signature dining experience.

 

About the Role

As Restaurant Manager, you’ll be responsible for delivering exceptional service, creating a welcoming and memorable atmosphere for our guests, and working closely with the kitchen and hotel teams to elevate the overall experience. This is a hands-on leadership role, perfect for someone who thrives in a premium dining environment where heart and professionalism go hand in hand.

 

Key Responsibilities

  • Lead the daily operations of The Dining Room, ensuring seamless and elevated service

  • Greet and engage guests with warmth, professionalism, and genuine hospitality

  • Manage, train and motivate the front-of-house team to deliver consistent, high-quality service

  • Collaborate closely with the Head Chef and kitchen team on service timing, menu knowledge, and seasonal offerings

  • Drive a strong wine service culture, including pairing recommendations and promoting our local wine program

  • Maintain high standards of cleanliness, presentation, and service etiquette

  • Manage reservations and guest communications to ensure a smooth dining experience

  • Monitor performance, customer feedback, and team culture, making improvements as needed

  • Uphold compliance with liquor licensing, RSA, and food safety standards

 

About You

  • Experience in a similar leadership role within a fine dining or high-end regional venue

  • OR an exceptional senior host/maître d’ ready to take the next step

  • Strong working knowledge of premium Australian wines – especially those of the Mornington Peninsula

  • A service style that’s elegant, personal, and relaxed – never stuffy or scripted

  • Exceptional communication and leadership skills, especially in high-pressure situations

  • Genuine enthusiasm for seasonal, local produce and a collaborative approach to food and beverage

  • Highly organised with a sharp eye for detail and guest experience

  • RSA certificate (essential)
