We are looking for a passionate Sous Chef who is ready to take on their next challenge, working and reporting directly to the Executive Chef, working evening services only, you will be responsible for the day to day running the kitchen and will have heavy influence in costing and developing the degustation, a la carte and event menus. ABOUT YOU:
An ideal candidate would have the following skill set:
- Strong leadership
- Confidence in leading multisite kitchen teams
- Creating operational producers
- Ensuring customer expectations are met and product quality is matched even when you are not in the kitchen
- Menu development.
- Trade qualification or equivalent (Cert III in Commercial Cookery)
- Fine dining experience is a must
- Knowledge of French cuisine & modern Australian will be an advantage
- Dedication to the production, preparation and presentation of dishes of the highest quality.
- Ability to take direction and work with minimal supervision.
- Team player attitude and willingness to work within a large, diverse team
- Commitment and passion for high-end service always ensuring the highest level of guest satisfaction.
- Ability to work in a fast-paced, high-volume environment.
- Adhere to strict stock rotation and minimum wastage guidelines.
- Ability to maintain a clean, hygienic and safe working environment.
- Want to grow and progress within the industry
- Relevant experience in a premium restaurant/banquet kitchen
- Enthusiasm and creative approach to providing high-quality cuisine
- Planning and organizational skills
- Demonstrated understanding of Australian food safety, WHS and HACCP
- Availability to work weekends and public holidays as required within a rotating roster
- Well presented, punctual and reliable
- Ability to prioritize and work under pressure
