This is an exciting opportunity for a strong operational leader to oversee a diverse and dynamic F&B offering across conferencing, weddings & events, restaurant dining, cellar door experiences, and in-room guest service, while playing a key role in shaping the next phase of the hotel’s growth and guest experience journey.
ABOUT THE ROLE:Reporting directly to the General Manager, this role is responsible for leading all Food & Beverage operations across the property, ensuring exceptional guest experiences, strong commercial performance, and a positive, high-performing team culture. The role oversees: This is a hands-on leadership role requiring strong operational capability, commercial acumen, and the ability to lead large service periods while continuously driving standards, culture, and profitability. Key responsibilities include: Leading and developing a high-performing F&B team across multiple outlets and service styles Driving revenue growth and operational profitability Managing labour costs, payroll, and roster efficiency Delivering exceptional weddings, conferencing, and events experiences Working closely with the Executive Chef and hotel leadership team to elevate the overall guest experience Creating strong team engagement, accountability, and service culture Maintaining exceptional presentation and operational standards across all guest-facing areas Supporting strategic planning and continuous improvement initiatives across the business
ABOUT YOU:To flourish in this role, you will be an energetic and inspiring hospitality leader with a genuine passion for food, wine, people, and guest experience. You will bring: Previous experience leading a large-scale or boutique hotel F&B operation Strong knowledge of restaurant, conferencing, weddings, and events operations Sound commercial and financial acumen with experience managing payroll, labour costs, and stock control A hands-on leadership style with the ability to lead service from the floor Exceptional guest engagement and relationship-building skills A passion for developing teams and creating a strong workplace culture The ability to thrive in a fast-paced, evolving environment Strong organisational and communication skills A proactive and solutions-focused mindset Immaculate presentation and professionalism Flexibility to work weekends, evenings, and public holidays as required
